I have a Sony DV camcorder that allows you to input analog video and output digital file through the firewire connection. The conversion I did was from 8mm digital to DV but you could just as easily use a VCR as your source. My thoughts on what camcorder to buy, I would purchase HD and use to think tape was the way to go but I am favouring SD card models now. The quality of the video is great, too bad iDVD can't burn HD DVDs yet but Toast can burn HD on regular DVD disks or Blueray if you have access to one of those burners. If that is going over the top I would buy a DV camcorder as it will be a cheaper solution than an analog camcorder plus conversion box with the added benefit of much higher video quality. If you look through the flyers you can get a DV camera using mini DV tape for around $200.
