A lot of people don't realize how regional Mexican food is. The
version in Tucson is often called Sonoran. It's my favorite. East of
NM, you get Tex-Mex with Myan influence. About Californian Mexican
food, the less said, the better.
Back in the early 1950, when I was a kid, you could not buy
ingredients for Mexican food in the Washington, DC area. My dad's
army work took him to El Paso from time to time. He would bring back
*canned* tortillas and make enchiladas with a fried egg on top. Yum!
