Can only help you with your first question.
In Openbook, you can do as in MS Word, Wordpad, etc.; go to the open menu, tab to file type, select the appropriate file type, shift tab back up and browse through the folders until you find the file and whack enter.
You can also do it from My Computer, or Windows Explorer. Find the file, pull up the file menu (Alt-F), move down to Open With, find Openbook and hit Enter.
If you don't see Openbook right away after arrowing down through the list of programs, hit Enter on Choose Program.
Now you get to arrow down through again. When you find Openbook, click OK. Make sure you haven't checked the box for Always use this program to open these file types unless you really mean it. It should be unchecked by default, but...

I would like to be able to read a paragraph, not just a sentence, to help me find the correct word and then be able to take it out of spell check to fix it as one can in Word.

Any other little tidbits somebody might have would be appreciated. I am not one of the lucky ones with K1000.
